Sau Mei is a white tea from Fujian province, China that is also referred to as “Long Noble Life Eyebrow” as it is thin and crescent shaped. The dry tea leaves is characterised with diverse colours such as brown, green or silver leaves. Thus, when it is brewed the colour tone may be transparent, pale yellow to green.  There is no fermentation processing involved as the leaves are naturally withered and dried in the sun. Similar to Oolong Tea, Sau Mei has a stronger flavour and aroma with a balanced and slightly sweet taste and a combination of walnut aftertaste. It has rich antioxidants that can boost the immune system, improve blood circulation, reduce cholesterol and maintain sugar levels.

Production Process of Sau Mei Tea

Sau Mei Tea is processed by plucking upper leaves and tips. This type of tea does not require any further processes, thus Sau Mei Tea leaves are naturally withered at high heat under the sun. The natural drying of tea leaves causes slight oxidation to take place. After this stage, Sau Mei Tea is lightly roasted in a wok. As a result, it creates a fresh and savoury flavour with hints of chestnut taste and natural sweetness.
